YONKERS, N.Y. -Being a chef and restaurateur offers lots of opportunity for me to participate in a great number of exciting events, and to witness a number of celebrities using their stature to do great things.

This week, I was fortunate to be chosen to be the chef for the United States Tennis Association (USTA) Foundation opening night gala in the presidents suite at the Billie Jean King Tennis Center.

Of course, I believe the best part of the evening was the Hudson Valley inspired Gala Menu I created and served to 250 guests prior to the opening ceremonies.

However, while people like Anna Wintour, Martha Stewart, Jim Courier, Kevin Spacey, Amanda Seyfreid and many others were there to attend the dinner, it was the live auction with guest auctioneer Alec Baldwin that did the most good.

The funds raised at the dinner and auction support the work of the USTA Foundation.

The USTA Foundation, under the direction of its President, Katrina Adams, has raised more than 20 million dollars for its support of underserved youth and people with disabilities to improve academics and strive for excellence.

While it will be fun to watch as Serena, Roger, Rafael and all the other tennis greats battle to win, we can all be happy that a simple dinner for generous guests has helped a great cause and allowed a great many children to win already.
